If his name doesn't ring a bell, it's high time you discovered this Japanese chef who specialises in traditional Kyoto cuisine. The capital of the country for over 1,200 years, the city remains the centre of traditional Japanese cuisine, more commonly known as "Kyoriori".

What makes this kitchen special? It is known for being healthy and pure. Based on a great respect for the seasons and the use of local products, it is composed of many vegetables, less salt, less fat and less sugar.
Chef Takagi carefully selects the ingredients for his two-starred restaurant, "Takagi", located in the town of Ashiya.
